Match the paper to the job

Measure your tray’s usable base before selecting a baking sheet. Full, half, third and quarter describe the paper cuts in this range; they do not automatically establish a fit with every gastronorm or bakery tray. Check the supplier’s temperature and use limits before putting any paper in an oven.

For wrapping or basket lining, check how the sheet sits around your normal portion, especially corners and open ends. Trial greaseproof paper with the food you serve and the time it remains wrapped. A sheet suitable for presentation is not automatically suitable for baking.

Greaseproof paper is selected for wrapping or lining where resistance to grease matters. Baking paper is selected for its specified oven use. Check the exact product’s heat limits; the names are not interchangeable approvals for cooking.
